由酵母粉、烏賊粉、干貝粉組成肉質營養呈味強化功能性添加劑,魚飼料中添加量 分別為 0、1、3、5 %,投餵石斑魚 8週,成長、魚肉粗蛋白、粗脂質、高度不飽和 脂肪酸含量並無顯著差異,添加5 %於出售前投餵2-4週可增加魚肉呈味胺基酸含量 提升風味。鰻魚飼料添加量分別為 0、1、3、5 %,投餵 2 個月,結果顯示,各組 的體長和體重無顯著差異,但臟體比和肝體比實驗組較無添加之對照組低,其中添 加3 % 組和對照組有顯著差異。肉質物性方面,5 % 組的前段和中段肌肉硬度顯著 高於其他各組,前段肌肉剪力則是控制組顯著高於其他各組。生藥免疫試驗以大黃 、黃芩、甘草等複方做為免疫強化機能性添加劑,石斑添加1.8 % 組的超氧歧化酶 活性在投餵第2週顯著高於其他各組。鰻魚飼料添加1.8 %,血漿超氧岐化酶活性在 第 3 週顯著高於控制組。血漿酚氧化酶活性和生藥添加劑量呈負相關。

The yeast, squid and scallop powder are used to form a functional flavored additive for nutrition and taste improvement. The amount of dietary is 0, 1, 3, 5%, and fed for 8 weeks of grouper.
