冷凍與生鮮水產品鑑識技術之研究

    本計畫利用近紅外光 (NIR) 檢測技術,建立冷凍解凍與生鮮未凍結漁獲物圖譜 之資料庫,並利用肌漿中粒線體β-羥基輔酶A去氫酶 (HADH) 活性連結 NIR 資料庫 ,鑑識判定冷藏與冷凍後解凍之漁獲物,以區隔生鮮及解凍水產品,同時結合不同 鮮度指標,對於其鮮度進行測定 。

    In this study, we use near-infrared spectroscopy (NIR) detection technique to establish the database for differentiation of frozen-thawed fish products. The method is based on the release of the β-hydroxyacylCoA-dehydrogenase (HADH) from mitochondria during freezing. The relationship between the HADH activity of fish products and the NIR database could provide the information for us to separate fresh and frozen-thawed fish products. At the same time, combined with different freshness indicators, and measured freshness.
