Hard Clam is one of the most important shellfish in Taiwan. Their fresh and delicious taste won the popularity in the general public. The success in artificial propagation has resulted in the increase of cultured area since 1983. Currently, the major productionarea located in Chang-hua, Yunlin, and Chia-yi counties. Due to environmentaldegradation on off shore area, however, the production of hard clam in unstable.Moreover, the occurrence of mass mortality became the bottleneck for the development of the industry. The hard clam smuggled from mainland china often causes an adverse impact to the local industry. The general public's health is also on jeopardy. To protect domestic hard clam industry and ensure food safety, it is necessary to do the market segmentation between the domestic produced and smuggled products. The established of a complete HACCP system (including aquaculture, harvest, and marketing) for hard clam is required to enhance the competitiveness of the Taiwanese hard clam industry.
