The purpose of this experiment is to develop an pre-market rearing ,depuration systemand optimal storage condition for oysters to produce excellent taiwan oyster that couldbe enhance global competition of oyster in Taiwan. This study examines the effects ofbivalve short-term stock rearing on the growth of soft inside their shell. The experimentoysters are reared in tank with different diets. The oysters are feed on different diets tocompare their somatic composition and taste, unsaturated fatty acid, taurine. Bacterialflora and coliform in the oysters soft be counted by many interval of experiment periodthat the oyster rear in continuously-flowing seawater for 24 hours without any food issupplied. The flowing seawater be filtered to 1 um filters and sterilized by different dosesozone .The change in Biochemical analyses,freshness quality,sanitary bacterial and totalbacterial in oyster meat during storage from 5 ℃ to 30℃.
