海水貝類上市物流管理模式之建立

文蛤物流處理中心導入HACCP 系統需先做好員工訓練與HACCP 計畫之擬定,並研擬HACCP 計畫之程序與管理實施步驟,本研究已針對此部分完成研議。另,經調查受訪廠商推行HACCP 制度系統認證所花費硬體建築設備成本為856.48 萬元/家,軟體設備花費成本為165.79 萬元/家,平均總費用為1022.27 萬元/家;而比較樣本廠商通過HACCP 制度系統前後的年平均營業額,顯示總營業額是有提昇的。當以生產管理面、人力資源管理面、行銷管理面、整體管理面四個構面評估樣本廠商通過HACCP 制度後的經營績效,顯示,各構面的經營績效均有相當明顯的助益作用。而文蛤真空包裝產品鮮度與風味測定試驗結果顯示採用真空包裝文蛤較無包裝文蛤在相同時期可維持較佳的鮮度。

The logistics central of hard clam want to draw into HACCP system, must to train employees and draft the plan of HACCP. About the HACCP plan of logistics central of hard clam were accomplished in this study. After investigated we found, the costs of factories try to carry out the HACCP system were NT$ 10.22 million. The turnover and operating achievements were increases after advance HACCP system. The fresh test results of hard clam by Vacuum packaged were better than non-packaged.
