異種鰻之加工利用

日本鰻為台灣重要的養殖魚種之一,但近年來受到氣候變遷、棲息環境及鰻苗過度
捕撈等負面因素影響,導致日本鰻魚及其加工製品數量大幅減少且價格飆漲,甚至
已影響整個鰻魚產銷供應鏈,出現供不應求的情況。因此,擬利用不同種類的鰻魚
開發符合衛生安全、品質良好且風味佳的白燒鰻、蒲燒鰻及藥膳調理包,強化鰻魚
之加工技術研發,平衡鰻魚市場的供應需求,彌補日本鰻魚加工製品短缺的困境。

Japanese eel farming is an important industry in Taiwan, but in recent
years by climate change, the impact of eel habitat and overfishing and
other negative factors, resulting in the number of Japanese eel and its
processed products were substantially reduced and prices have rocketed,
and even has affected the entire eel production and marketing supply
chain, appeared in short supply situation. Therefore, the proposed use of
different types of eel development in line with health and safety, good
quality and good flavor of Roasted eel, Prepared eel and Diet
conditioning package, enhanced processing technology developed eel, the
eel market supply and demand balance to make up the Japanese eel
processing products shortage dilemma.
