Japanese eel farming is an important industry in Taiwan, but in recent
years by climate change, the impact of eel habitat and overfishing and

chain, appeared in short supply situation. Therefore, the proposed use of
different types of eel development in line with health and safety, good
quality and good flavor of Roasted eel, Prepared eel and Diet
conditioning package, enhanced processing technology developed eel, the
eel market supply and demand balance to make up the Japanese eel
processing products shortage dilemma.
