低度利用水產資源富含功能性胺基酸、胜肽、不飽和脂肪酸和微量元素等多項生物 活性成分,應用作為保健食品之素材,不僅可提升附加價值,亦可有利於水產資源 之永續。因此本計畫之主要目標係以水產機能成分評估作為保骨素材之可行性。

Underutilized marine resource with physiological beneficial amino acids, peptides, unsaturated fatty acids, and trace mineral, is bioactive material for application on functional foods. Using these unexploited marine resources is not only increasing added-value but also is benefit to sustainable development. The aim of this study is to evaluate the potential of health bone for marine functional compounds.
