乳酸菌發酵紅藻藻渣作為保健食品之研究

本研究將麒麟菜(Eucheuma serra)萃取機能成分後之剩餘物 (藻渣) 為原料,以酵 素水解處理後作為乳酸菌發酵基質,並藉由乳酸菌的發酵作用以產生具有舒眠和穩 定情緒的機能成分 GABA。最終篩選結果以P2 (Lactobacillus lactis)為公告可供 食品使用原料之乳酸菌開發麒麟菜藻渣發酵產品,做成Synbiotics,進行人類結腸 腺癌細胞 Caco-2 細胞存活率試驗,細胞存活率皆大於 80%。細胞吸附試驗,P2 麒 麟菜藻渣複方發酵乳酸菌粉吸附率為 63.23%,市售複合乳酸菌粉吸附率為 40.52%。檢測市售GABA 茶之 GABA 含量為 600 mg/100 g,GABA 膠囊之 GABA 含量 為 8513 mg/100 g ,而麒麟菜藻渣發酵產品之 GABA 含量為 5400 mg/100 g。綜觀 以上試驗,在腸道吸附試驗、GABA 含量,以乳酸菌發酵紅藻藻渣確實可作為後續發 展保健食品的潛力。

In this study, the residue (algae residue) after extracting functional components from Eucheuma serra was used as a raw material, which was hydrolyzed with enzymes and used as a fermentation substrate for lactic acid bacteria, and the fermentation of lactic acid bacteria was used to produce sleep-relieving and mood-stabilizing functions ingredient GABA. In the final screening result, P2 (Lactobacillus lactis) was announced as the lactic acid bacteria that can be used as a food raw material to develop a fermented product of Eucheuma algae residue, which was made into Synbiotics, and the survival rate of human colon adenocarcinoma cells Caco-2 cells was tested. The cell survival rate was greater than 80%. In the cell adsorption test, the adsorption rate of P2 lactic acid bacteria fermented Eucheuma algae residue powder was 63.23%, and the adsorption rate of commercially available composite lactic acid bacteria powder was 40.52%. The GABA content of commercially available GABA tea was determined to be 600 mg/100 g, the GABA content of GABA capsules was 8513 mg/100 g, and the GABA content of the fermented Eucheuma residue product was 5400 mg/100 g. The above tests, in the intestinal adsorption test, GABA content, the red algae residue fermented by lactic acid bacteria can indeed be used as the potential for the development of health food.
