飼料油脂氧化及玉米原料品質對吳郭魚肉色之影響

吳郭魚是我國養殖產量最大的魚種,但近年來業界反映吳郭魚出現黃肉或水肉等肉 質異常的問題,這些退貨原料魚的損失必須由養殖戶承擔,造成大量的經濟損失。 飼料是影響魚肉品質的關鍵因子,不當或過長的保存條件容易造成油脂氧化,影響 生理健康與魚肉品質,此外,玉米原料富含葉黃素類色素,過高添加可能導致魚體 黃色素累積。本計畫擬針對飼料油鮮度和玉米蛋白源進行雙因子試驗,評估對魚肉 品質的影響。

Tilapia is the largest production aquaculture species in Taiwan. However, fillet processing industries hvae been reflecting innormal texture problems of fish fillet, such as yellow coloration and watery flesh. These innormal-texture fish will be returned, resulting in great enconmic loss to aquaculture farmers. Feed is a key factor for fillet quality. Inappropriate or overlong storage of feed easily results in lipid oxidation and causes negative effects on fish physiology and flesh quality. Additionally, the excessive inclusion of corn-based ingredients may lead to discoloration of flesh due to hihgh level of xanthophyll. In this project, experiment is designed as two-factors, which are lipid and corn meal, to investigate the effects on flesh quality.
