本計畫擬利用數學方程式建立水產品冷藏保存期限模組,以客觀的鮮度指標評估食 品之安全性與品質,並探討於離鏈溫度下之鮮度變化,提供業者建立水產品冷鏈保 存期限之參考依據。

This study intends to use mathematical equations to establish a refrigerated shelf life module for aquatic products. Then to evaluate the safety and quality of food with objective freshness indicators, and to explore the freshness changes at off-chain temperatures. The aim of this study is trying to provide operators with a basis for establishing the cold chain shelf life of aquatic products reference.
