低耗能新穎冷凍技術對漁獲保鮮品質之研究

臺灣石斑魚出口中國產值佔 91.6%,近期因出口受阻,導致石斑魚滯銷,且臺灣石 斑魚出口方式約有 98.6% 為活魚,解決滯銷及漁獲保存問題,未來可加工為冷凍水 產魚排,以便於流通的樣態進行商業布局期,但水產品因酵素活性強及易受微生物 侵入,若出口至較遠國家,易因貯藏期過短造成變質,因此本計畫期建立電場輔助 冷凍水產品之較適條件,提升冷凍水產品之架售期及品質,透過各式電場輔助冷凍 技術,降低產品之滴液損失 15%,與市售使用進階冷凍之水產品,依增值比例估算 ,預估可提升產品售價 15%。

Taiwan's grouper exports to China account for 91.6% of the output value. Recently, the export of grouper has been blocked, resulting in slow sales of grouper. There's about 98.6% of Taiwan's grouper exports are live fish. However, due to the strong enzyme activity and susceptibility to microbial invasion, aquatic products are likely to deteriorate due to the short storage period if they are exported to distant countries. Therefore,this project introduce electric field technique to asist freezing.Our goal is improve the shelf life and quality of frozen aquatic products, and reduce the drop loss of products by 15% through various electric field-assisted freezing technologies. Compared with commercially available aquatic products using advanced freezing technique, it is estimated based on the value-added ratio. Increase product price by 15%.
