目前石斑魚因用藥問題及其他因素暫停外銷,影響漁民生計,希望透過各項應 變措施,解決石斑魚銷售問題。目前計畫目標為透過開發石斑魚食材,進行水產品 市場調查即適用機械開發、水產品質安全及營養強化、多元易食水產品開發、石斑 魚水產品加工、提升冷鏈品質及副產物加工,協助提升石斑魚加工利用,開發及推 廣優良國產石斑魚產品,使石斑魚產業蓬勃發展。本計畫為多元易食水產品開發-石 斑魚質地修飾飲食多元開發特定族群多元化水產品加工,利用產銷失衡石斑魚進行 產品加工,開發國產石斑魚製作魚豆腐及魚麵,對產品進行營養評估及官能品評 ,後續也將會陸續開發多種石斑魚加工產品,希望能推廣國產好食材及增加漁民收 益,提升石斑魚加工品質及促進石斑魚產業發展。

Due to the concern of drug residue and other issues, the export of groupers is suspended recently, which affects fishermen's livelihood. We would like to solve this problem through some measures. The objective of this project is to perform market survey to the aquatic products, develop applicable machine, improve the quality and nutrition of aquatic products, develop diversified and easy-to-eat aquatic foods, process aquatic products of groupers, improve the quality of cold-chain and process the by-product through developing the ingredients of groupers. This project is to make the industry of grouper flourish through enhancing the processing and using of groupers as well as developing and promoting domestic excellent grouper products. This project will develop diversified easy-to-eat aquatic foods, modify the texture of foods made of groupers, We will use the groupers which encounter sales imbalance to conduct product processing. We will develop the domestic groupers into fish tofu and fish noodles, and further evaluate the nutrition and function of the products. After that, we will constantly develop various kinds of grouper processing products for promoting domestic good food ingredient, increasing the fishermen’s income, improving the quality of grouper processing and the development of grouper industry.
