強化水產剩餘物利用技術-邊角肉開發水產加工品之品質 研究

近期因國產養殖石斑銷陸受阻,導致養殖漁獲大量滯銷,且國內養殖石斑魚多以活 魚形式外銷,或以急速冷凍鮮魚、冷凍切片、切塊等未經調理狀態出售,其加工製 品種類不多,此外,石斑魚加工所產生的剩餘物,約占全魚之40-60%,為有效提升 其利用率,本研究利用石斑魚剩餘物(邊角肉)開發重組魚肉乾與膨發食品等休閒加 工產品,建立產品加工製程技術,多元開發水產加工產品,藉以提高水產剩餘物利 用率及產品附加價值,並提升本土水產品競爭力,增進漁民及加工業者收益,帶動 產業利用風潮。

Recently, due to the blockage of domestic farmed grouper sales, a large number of farmed fish are unsalable, and domestic farmed grouper is mostly exported as live fish, or sold in an unconditioned state such as quick-frozen fresh fish or frozen fish fillets. In addition, the residue produced by grouper processing accounts for about 40-60% of the whole fish, in order to effectively improve its utilization rate, this study uses the by-product of grouper (leftover fish) to develop intermediate moisture food such as restructured fish products and puffed food, establishes product processing technology, and develops various processed aquatic products, so as to improve the utilization rate of aquatic product residues and the added value of products, and enhance the local competitiveness of aquatic products increases the income of fishermen and processors, and drives the trend of industrial utilization.
