水產未利用資源作為抗氧化及延緩老化機能保健食品之開發

裸鰛水解液具有DPPH清除力、還原力及螯合亞鐵能力,其值分別為91.01%、1.39和93.92%。而乳酸發酵處理可提升其抗氧化能力之表現,尤其是DPPH清除力(達96 %)更相當於200 nM Vit E 的表現。裸鰛水解液、脫腥液和乳酸發酵液對於Salmonella typhimurium TA100都不具毒性及致突變性,並且具有抗致突變性,其中以裸鰛乳酸發酵液的抗致突變性最強(73~78%)。將3樣品分別調製複方,其抗氧力皆有提升的趨勢,其中對DPPH清除力為96.79 ~ 97.96 %,較200 ppm Vit. C(95.05 %)高,而還原力及SOD的表現則與400 ppmVit. C和200 ppm EDTA相當。水解裸鰛複方、脫腥裸鰛複方和乳酸發酵裸鰛複方,具有高抗氧化能力,可防止自由基對DNA的損傷、活化人類神經細胞並促進神經突觸的增長。另對免疫細胞HB4C5有活化效果及可促進免疫細胞增生抗體IgM及促進腸內益生菌(Bifidobacterium longum)之生長,此in vitro試驗間接顯示裸鰛複方具有發展成為延緩老化、免疫機能調節、提升腸胃保健功能等多項機能保健產品發展的潛力。此外,裸鰛水解液製作乳酸菌培養基,其效果與商業培養基相當,可做為商業培養基之替代品。

研究報告摘要(英) Enzymatic hydrolysates form Benthosema pterotum possessed DPPH radical scavenging activity, reducing power and metal chelating activity were 91.01%、1.39 and 93.92%, respectively. Moreover, Increased the potentially antioxidative activity with lactifermentation of the B. pterotum hydrolysates, especticily DPPH radical scavenging activity reached to 96% and closed to 200 nM α-tocophenol. Hydrolysate , deodorized hydrolysate and fermentated product of B. pterotum were evaluated inhibition Salmonella typhimurium TA100 mutation by 4NQO orB[a]P, the antimutagenicity ability (73~78%) of fermentated food was higher than the others. The complex were derived from hydrolysate , deodorized hydrolysate and fermentated product of B. pterotum reveled strong antioxidative activity, against free radical-induced DNA damage and enhanced SH-SY5Y and HB4C5 cell line in vitro, further HB4C5 cells to secrete antibody (IgM) . Additionally, viability enhancement of Bifidobacterium longum and as a alternative media for lactic fermentation . From those results, complex were derived from B. pterotum hydrolysates has been considered as a potential , natural and bioactive source for antioxidant, anti-aging, immune regluation and prebiotics.
