The study is to investigate the most suitable hydrolysis conditions and analysis sugar products of enzyme hydrolyzate from Eucheuma serra residuals. Results showed that algal residuals composition had lower ash and carbohydrate than algal. The detected results of heavy metals such as cadmium, lead, mercury and inorganic arsenic showed that compliance with regulations. Algal residuals were hydrolysis by crude enzyme from Pseudomonas vesicularis MA103 and Aeromonas salmonicida MAEF108. The result was hydrolysis with 5% enzyme for 24 hr to obtain higher total sugar and reduce sugar contents. The higher total sugar and reduce sugar contents were 17 mg/mL and 0.5 mg/mL, respectively. The sugar composition was analyzed by HPLC. There was a molecular weight about 129 Da monosaccharide produce from 5% enzyme hydrolyzate. After hydrolysis of 5% enzymes for 24 hr, the algal residuals can be hydrolysis 61.52-65.04% (compared to 100% before hydrolysis). In view of the above, the 5%-24 hr enzyme hydrolyzed group is the best hydrolysis condition, which can obtain higher total sugar and reducing sugar, and more hydrolyzable algae residue. The sugar obtained can be used for nutritional supplement in the future. The development of diet can enhance the added value and industrial competitiveness of seaweed, and can also achieve the goal of sustainable resources.
