海參加工副產物作為保健新素材之研發

水產工業在加工過程中,往往伴隨著副產物的生成,由於經濟價值較低、回收再製成本過高或產量不高,因此大多當做廢棄物處理。而爲有效利用海參加工副產物,同時達到提高經濟利益之目的,本計畫探討黑尾參體壁與內臟之功效評估。黑尾參體壁之一般成份以粗蛋白含量最高,其次為粗灰分,而內臟中檢出鹽酸不溶物占0.14%。黑尾參內臟經由A及B兩組酵素水解,以B組條件較不具有苦澀味,適合開發為保健素材,且該水解物在具良好之抗氧化能力。在細胞實驗中得知:水解物能促進HB4C5免疫細胞增生及其IgM抗體分泌,亦能活化J774.1吞噬細胞增生能力達160%,也能使BAEC內皮細胞增生並提升NO分泌。而在動物實驗部分,餵食黑尾參內臟水解物之小鼠較控制組相比,均能延長其游泳時間、但並未降低小鼠運動後血清中的肌酸激酶、尿素氮與血乳酸之濃度,然而在調節免疫評估上則均與控制組無差異。此外,黑尾參體壁中的多醣蛋白,總量約占乾物重4.2%,其成份以可溶性蛋白最高,占73%;hexuronic acid、fucose及hexosamine則分別占1%、10%及16%。

A by-product is a secondary or incidental product deriving from a seafood manufacturing process, due to the by-product has low value, low yield and high price for recovery these difficult problems, therefore most of the by-product is regard as waste. In order to give the by-product of sea cucumber efficient application and raise the additional value of it, so in this research we estimated the efficacy of the internal organs and body wall of Holothuria atra. Crude protein was the major portion of the body wall, and the ash as follow. The acid-insoluble substance of internal organs was 0.14%, and none detected in body wall. The internal organs of H. atra were hydrolyzed with A and B enzyme groups, while the hydrolyte of B enzyme group had no bitter flavor, so we suggested that it agreed with applying for health food. The hydrolyte of B enzyme group had good antioxidative abilities, and it also could activate the proliferation and IgM antibody secretion of HB4C5 cell, activated the proliferation of J774.1 cell to 160% and induced the NO secretion of BAEC cell. In animal test, the hydrolyte of B enzyme group can elongate the swimming time of mice, and the concentration of creatitine, urinary urea nitrogen and lactate in serum was no effect, and there was also no effect on immunomodulatory. The glycosaminoglycan in body wall was 4.2% (dry base), and it was composed of 73% soluble protein, 1% hexuronic acid, 10% fucose and 16% hexosamine.
